Spiced Pumpkin Coffee Creamer

Ingredients

Pumpkin Creamer

  • 1 1/2 cups heavy cream
  • 2 Tablespoons pumpkin puree
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon homemade pumpkin pie spice* homemade recipe below
  • 2 cinnamon sticks

Pumpkin Spice Mix

  • 3 Tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • Tiny pinch ground black pepper

Garnish

  • Whipped cream
  • dash cinnamon
  • chocolate bits

Instructions

Pumpkin Spice Mix

  1. In a small bowl, mix together all 6 spices and store in an airtight container for up to 2 months.

Pumpkin Creamer

  1. In a large measuring cup, whisk together the heavy cream, pumpkin puree, maple syrup, and pumpkin pie spice.

    n small saucepan over medium heat, whisk together heavy cream, pumpkin, maple syrup, and pumpkin pie spice. Add cinnamon sticks and increase heat to medium-high. Bring to boil, whisking occasionally, for 1 minute, then remove from heat and let creamer cool in pan 5 minutes before using in your coffee. Add sugar to your coffee if you take it that way. You can also add whipped cream and a sprinkle of cinnamon too.

  2. Pour this into a small saucepan and gently heat the mixture over medium-low heat. After a few minutes, when it's heated through but not boiling, add the cinnamon sticks. Bring to a slow boil, whisking continuously, and boil for 1 minute.

  3. Remove the pan from the heat and let it cool for 6-7 minutes. Then you can use it in your coffee or other drink. Once it's fully cooled, the creamer can be stored in the refrigerator for 1 week.

  4. Garnish your drink with whipped cream, cinnamon, or chocolate bits.
