Keeping with the theme of southern wedding receptions, Baked Pineapple is a staple of every wedding I’ve ever been to in Charleston and Savannah. So, of course, I’m sure it would’ve shown up at Rafe and Juliet’s outdoor wedding reception on the Isle of Grace. My dear friend Jean gave me this recipe which is more like a bread pudding than a soufflé. And it’s always the first thing to go on my buffet table.
Of course I thought it was a dessert, but apparently it’s an appetizer. That’s what happens when a girl from New Jersey pretends to be a southern cook. 🙂 Although, I’m not the only one who thought it was a dessert. Detective Garza, a major secondary character in the series from Trenton, NJ who’s struggling with his move to Savannah, thought it was the wedding cake!

Baked Pineapple
Ingredients
- 1 cup white sugar
- ½ cup unsalted butter softened
- 4 large eggs
- 1 pinch ground cinnamon Optional
- 1 pinch ground nutmeg Optional
- 1 20-ounce can crushed pineapple with juice
- 5 slices white bread torn into 1" pieces
Instructions

Preheat the oven to 350℉, and grease a 9" round casserole dish.

In a standing mixer, cream together the sugar and butter. Then beat in 1 egg at a time. With a wooden spoon, stir in the cinnamon and nutmeg. Then fold in the pineapple and bread. Keep folding until pineapple and bread are evenly dispersed and transfer to the baking dish.

Bake for about 1 hour, until bubbly and lightly browned.
