This is such an easy lunch, and not just for adults. I love making this during the holidays when I have leftover cheese lying around. You can substitute any cheese you want, as long as it’s the kind of cheese that can melt in medium heat. I added fig jam to this recipe because I love how the sweet jam melds with the tart apples. This recipe calls for sourdough bread, but any thicker bread works great.

Apple & Brie Grilled Cheese
Ingredients
Sandwich
- 8 slices Sourdough bread
- 2 Granny Smith apples thinly sliced
- 10 ounces Brie cut into 12-16 equally thin slices (1 cup)
- 3 Tablespoons Butter softened
- 4 Tablespoons honey butter below
Honey Butter
- 2 Tablespoons salted butter room temperature
- 2 Tablespoons honey

In a small bowl, stir gothern the softened butter and honey. Set aside.
Sandwich

Heat an electric griddle to 350℉. Lightly grease the griddle.
Butter the top sides of all 8 pieces of bread. Lay 4 pieces of bread on the griddle, buttered-side down. Spread 1/2 Tablespoon of the honey butter on each sliced on the griddle. Top each slices with 2 slices of brie and 1/2 an apple (the apple slices) fanned out on top of the cheese.
Spread the rest of the hot honey on the other four slices and place them on top of the sandwiches making sure the honey side is on the apples and the buttered side is facing up.

Once the bottom side of the sandwiches are golden brown, flip and cook the other side, pressing down on the sandwiches to melt the cheese. Cook about 5 minutes per side. Remove from the heat and allow each sandwich to rest of 5 minutes before cutting and serving.
