Since this is the month of entertaining outside, I’m sharing some of my favorite summertime recipes that I serve to family and friends. Today I’m making Grilled Tilapia that is both easy and delicious. Not everyone loves seafood, but I’ve found that tilapia is a mild enough fish that even the most determined fish-hater can enjoy it.. But the marinade I use for this recipe also works well with chicken.
I serve this fish with my Black Bean Salsa, homemade cornbread, and a green salad filled with veggies fresh from the garden. I hope you all are enjoying these hot summer nights… it’ll start snowing soon enough. LOL.

Grilled Tilapia
Ingredients
- 4 tilapia fillets 4-6 ounces each
- 2 Tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Heat the grill to medium-high heat.

Dry the fish with paper towels to make sure they are completely dry. Rub down the fish with olive oil. Sprinkle with salt and pepper. Cook the grill on the grill for 2-3 minutes and then flip the fish and cook for another 3 minutes. The fish are done when the internal temp reaches 140 – 145℉.
