I can’t believe this is the third week of Rafe and Juliet’s Valentine’s Day Dinner, and dinner is about to be served. Today Rafe is serving the Roasted Asparagus he made last week along with his Slow Cooker London Broil. Now that everything is set, they can eat dinner . . . and look forward to dessert! Rafe and Juliet are the hero and heroine of Every Deep Desire, book 1 in the Deadly Force series.


Rafe: “The asparagus is ready and so is the meat. Juliet is giving me a hard time because dinner is just meat and veg. But I like meat and asparagus so why add extra things no one wants to eat? Besides, I want to leave room for dessert. And, I’m hoping, that after dessert Juliet will be so happy she’ll shower me with kisses. Although I have to admit I wouldn’t mind one of those hearts filled with chocolates as well!”


Slow Cooker London Broil

Ingredients

  • 1 1/2 pounds London Broil
  • 2 Tablespoon ketchup
  • 1 Tablespoon red wine vinegar
  • 2 cloves garlic minced
  • 2 Tablespoon brown sugar
  • ½ Tablespoon Worcestershire sauce
  • ¾ cup beef broth
  • 1 small onion cut into 1" pieces
  • 2 Tablespoon butter
  • 1 Tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Season the meat with salt and pepper on all sides of the London broil. Set aside.

  2. In a small bowl, stir together red wine vinegar, ketchup, brown sugar, garlic, Worcestershire sauce, and beef broth. Set the sauce aside.

  3. In a cast iron skillet, melt the butter and heat the olive oil. Sear the meat in the pan for about 20 seconds on each side of the meat. Remove the meat and place in a slow cooker. Place the onions on top of the meat and pour the sauce over the meat and onions. Cook on low for 7-8 hours or on high for 3-4 hours. Cook until the meat is very tender and falls apart. Serve immediately.
