Honey Baked Squash

Ingredients

  • 1 pound yellow squash washed and sliced 1/4" think
  • 4 Tablespoons butter
  • 1/2 cup honey

Instructions

  1. Preheat the oven to 350℉. In a large roasting pan with at least 2" high sides, place a large plastic oven bag (the kind you can roast a chicken or a turkey in).

  2. Add the squash slices, honey, and butter into the oven roasting bag. Use the tie that comes with the bag to close the bag. Then make a few cuts into the top of the bag to allow steam to escape. You only need about 3 small cuts.

  3. Bake for at least 20 minutes--sometimes you need to bake this longer, depending on how mature the squash is. The thicker slices and more mature squash may require another 5-10 minutes in the oven. You want the squash to be cooked through, but not too soft that it falls apart.

  4. Remove the pan from the oven and carefully open the bag (watch for the steam). Pour the squash into a serving bowl. Serve immediately.
