
Preheat the oven to 350℉. Grease and line a 9" x 11" glass baking dish with parchment paper.
In a food processor, blend the graham crackers, sugar, butter, and salt until you see small crumbs. Press the crumbs into the bottom of the baking dish.
In a large bowl, mix together all of the filling ingredients. Whisk until the filling is well blended and pour over the graham cracker crust.
Bake for 18-26 minutes or until the center of the bars appears set and not gooey. Remove from the oven and allow to cool on a rack for 45 minutes. Then put the bars into the refrigerator and chill for at least 2 hours before serving. Cut and serve with a spoonful of whipped cream and/or a slice of key lime, if desired.
