
In a large bowl with a hand mixer (or the bowl of a stand mixer), mix together the cream cheese, butter, vanilla extract, and salt until creamy.
Slowly beat in the confectioner's sugar and beat until smooth. Then mix in the shredded coconut until all the ingredients are evenly distributed. Chill the dough for 20 minutes, at least.
On a dinner plate, pour the cinnamon into the center. Then, using the chilled dough, make small balls of dough with an ice cream scoop or a Tablespoon. Form the balls between your hands and roll in the cinnamon until lightly coated. Set the finished balls on a lined dish or baking sheet to set. Repeat until all the dough is used up, adding more cinnamon if necessary.
Serve immediately. These candies may be stored in an air-tight container in the refrigerator for one week.
