Baked Pineapple

Ingredients

  • 1 cup white sugar
  • ½ cup unsalted butter softened
  • 4 large eggs
  • 1 pinch ground cinnamon Optional
  • 1 pinch ground nutmeg Optional
  • 1 20-ounce can crushed pineapple with juice
  • 5 slices white bread torn into 1" pieces

Instructions

  1. Preheat the oven to 350℉, and grease a 9" round casserole dish.

  2. In a standing mixer, cream together the sugar and butter. Then beat in 1 egg at a time. With a wooden spoon, stir in the cinnamon and nutmeg. Then fold in the pineapple and bread. Keep folding until pineapple and bread are evenly dispersed and transfer to the baking dish.

  3. Bake for about 1 hour, until bubbly and lightly browned.
