I have leftover peaches, so tonight I’m making my favorite Brown Sugar Peach Cobbler Bars. It’s a perfect way to enjoy the last taste of summer.
I call these my super-easy buckeye cheat cookies. They are similar to buckeyes, but they have graham cracker crumbs in the middle and are made as a bar cookie which is far easier than making balls and covering them with chocolate. And they are delicious!
Today is the feast day of St. Nicholas, the man who would become Santa Claus. But before he was a compassionate gift giver, he was a bishop whose powerful right hook made him famous in 325 AD. And there’s also a cookie recipe in his honor!
