I’ve been traveling a lot and I’m finally home for more than a few weeks.

And since the weather has finally changed–it’s now chilly instead of ninety-plus degrees–this weekend I’m going to celebrate by hosting a chili dinner around our backyard fire pit. Since it’s just adults coming, there’s no need to make a dessert. But I will serve my favorite S’mores Hot Chocolate. It’s fall yumminess in a mug!


S’Mores Hot Chocolate

Ingredients

  • 2 cups whole milk
  • 1 cup water or more milk
  • ¼ cup cocoa powder
  • 2 Tablespoons chocolate syrup
  • 2 Tablespoons sugar
  • 1 pinch salt
  • Graham crackers crushed for lining rim
  • ½ cup marshmallows

Instructions

  1. Move an oven rack to the second highest rung, close to the broiler but not too close. Preheat the oven to a low broil. Place the marshmallows on a broiling rack and broil until the marshmallows barely begin to turn golden brown and look melty.

  2. In a saucepan over medium-low heat, stir together the milk and water. Cook and stir for 6 minutes, until the milk is warmed–but do not scald or boil or overheat.

  3. Once the milk is warmed, slowly stir in the chocolate syrup, cocoa powder, sugar, and salt. Whisk over medium-low heat until well combined.

  4. While the milk is heating, prepare the mugs. Take a melty marshmallow and rub it around the mug rims. Place the graham cracker crumbs on a small, shallow plate. Then dip the mug rims into the crumbs. Add the leftover crumbs to the bottom of the mug. Pour the hot chocolate into the mug, being careful not to dislodge or smudge the crumbs on the rim.

  5. Once the hot chocolate is in the mugs, place the mugs on the baking sheet again and top with the warmed marshmallows. Put the sheet back in the oven and broil the marshmallows for another minute, making sure they don't burn.

  6. Remove the mugs from the oven and garnish with chocolate syrup and extra crumbs, if you have them.
