Since tomorrow is National Asparagus Day, I thought I’d share one of my favorite asparagus recipes. The truth is I don’t really like asparagus all that much, so if I can cover it with sauces and/or cheese, I’m happy. I hope you enjoy this easy veggie dish and that you have a wonderful weekend.

Cheesy Asparagus
Ingredients
- 3 pounds fresh asparagus trimmed and washed
- 1 cup heavy whipping cream
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1-1/2 cups shredded whole milk mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 fresh lemon slices for garnish
- fresh basil leaves for garnish
Instructions

Preheat the oven to 400 ℉ and grease a 9" x 13" baking dish.

Place the asparagus in the baking dish.

In a small bowl, whisk together the cream, salt, and pepper. Pour over the asparagus in the baking dish.

Top the asparagus and cream wit the mozzarella and parmesan cheese. Bake for about 30 minutes, until the top is brown and crusty.

Remove from the oven and let it cool for 5-8 minutes before serving. Garnish with fresh lemon slices and basil leaves
