It’s Friday and I’m looking forward to the weekend where I’ll be planning all sorts of things for my new book release next Tuesday. It’s so hard to believe IN SEARCH OF TRUTH, the third book in the Deadly Force series, comes out in a few days. But I’m excited and ready to move on to the next book in the series. 🙂 Now it’s time for the third installment in Nate and Sarah Walker’s Wedding Morning Breakfast. And today’s recipe is Egg and Crabmeat Scramble.


Sarah Munro ~ “As Nate and I talked and ate breakfast on the balcony of our Charleston, SC hotel room, a raindrop hit my nose.

“Oh no!” I look up and notice dark clouds taking out the warm sun. “It can’t rain on my honeymoon!”

Nate laughs and pulls me into the hotel room. “It’s summer in the south. It’ll rain off and on all day.”

While I know that’s true, I throw myself onto the bed in a sulk. “I have plans for us today. I don’t want it to rain.”

Nate kisses my forehead, and I hear more raindrops hitting the windows. A minute later, he’s pulling the breakfast table into the room through the French doors. Then he drags in the chairs. I sit up and he hands me a cup of coffee.

“We haven’t finished our breakfast.” Nate lifts the silver lid of a chafing dish and an incredible smell emerges. “Are you still hungry?”

I sit up and swing my legs over the edge of the bed. “You mean after chocolate strawberry mochas and melt-in-your-mouth blueberry scones?” My stomach growls and I laugh. “I guess so. Besides, we have a lot to do today so we might as well eat as much as we can.” I stare at the rain pouring outside. “If it stops raining.”

Nate arranges the chair and I sit next to him. He serves me a huge plate and I hand it back to him. “I think this is yours.”

He winks and hands me a plate with a smaller amount. “Don’t fret about the weather. I’m sure we can find something to do.”

A flush warms my face but I nod toward the clock on the bedside table. “We’re meeting our tour guide soon. And we have plans for the rest of the day. We’re going to see all of Charleston!”

He keeps his gaze on me and takes his first bite. Suddenly, his eyes widen, and then they close.

I touch his arm, enjoying the feel of his warm skin beneath my skin. “Are you okay?”

He swallows and opens his eyes. “Taste your eggs.”

“Alright.” I wrinkle my nose and take a bite. I’m not a huge fan of eggs. I prefer things like strawberry pie. But as soon as I do, I realize these are not normal scrambled eggs. “These are delicious.”

“Mmmm,” he says with his mouth full again.

The eggs are so good, laced with crabmeat and cream, we eat in silence for a few minutes. Finally, I wipe my mouth with a napkin. “There’s another chafing dish we haven’t touched.”

“I think that’s a potato hash.”

I moan. “I love potato hash. But I seriously can’t eat another bite.”

Nate leans back in his chair, takes my hand, and kisses my knuckles. “What are your plans again? What are we doing instead of staying alone in our gorgeous hotel room?”

I sigh and close my eyes. “First, we’re meeting the tour guide who’s going to take us through churches and churchyards. I’ve heard that Mercy Chastain, the last witch accused in the U.S. in 1704, is buried somewhere in town.”

Nate nibbles my fingers, and a chill goes up my arm.

I open my eyes and give him the “look” I reserve for my fresher grad students. “Then we’re touring three mansions and taking the ferry out to Fort Sumter.”

He raises an eyebrow and kisses my palm.

I shiver and look away to stay focused. “After that tour, we’re having dinner here at the hotel followed by a midnight ghost tour of the old jail.”

Nate pulls me out of my chair and I end up on his lap. “I guess I should’ve prepared myself for marriage with a historian.”

Thunder hits outside our windows and the lights go out. Although it’s still morning, it feels much later in the day. I wrap my arms around his neck. “You’re an ex-soldier. I thought you’d like Fort Sumter and old military prisons.”

Thunder hits again and lightning reflects the green depths of Nate’s eyes. “I know what I’d rather do.”

I kiss him gently. “What’s that?”

His breath tickles my cheek. “Finish the potato hash.”

I laugh and jump off his lap. The lights switch on again and sunlight floods the room again. “Then let’s finish so we can start our day.”

He stands, takes me in his arms, and whispers in my ear, “Let’s finish so we can start our lives together.”

I smile and rest against his solid chest. “I think that’s the most perfect plan I’ve ever heard.”


Egg & Crabmeat Scramble

Ingredients

  • 4 large eggs less 1 egg white
  • 1/3 cup fresh crab meat about 1.5 ounces
  • 2 teaspoons olive oil divided
  • salt to taste
  • black pepper to taste
  • thinly sliced chives for garnishing, optional

Instructions

  1. In a large bowl, mix together the 4 large eggs, minus 1 egg white. (4 egg yolks + 3 egg whites). Beat well with a fork and add a teaspoon of olive oil and salt and pepper to taste. Set aside.

  2. In a frying pan, add 1 teaspoon of olive oil and heat the oil over low heat. Add the fresh crab meat and stir, breaking up the crab into small pieces. Keep sautéing until the moisture is gone and add salt and pepper to taste.

  3. Spread the crab meat even across the pan and pour the beaten eggs over the crabmeat. Cook over low-medium heat and wait for 30 seconds to allow the eggs to set around the edges.

  4. Use a spatula to pull the set out edges of the eggs toward the center of the pan. Repeat around the pan to make sure all the eggs make it to the center of the pan. Keep turning over the eggs so that they cook all the way through. Swirl and twirl the eggs to break them up. When the eggs are about 95% cooked, remove them from the heat so they don't overcook. Sprinkle with chives and serve immediately.
