Because I’m participating in so many holiday anthologies and novella advent calendars this month, I’m sharing my favorite recipes that appear in these holiday novellas. Today’s recipe for Eggnog Cinnamon Casserole is from the Christmas breakfast in my new Kingsmill Courtships novella Mistletoe for Holly which can be found in the Holly and Heartstrings Free Bookfunnel Anthology. I like to serve this casserole with fresh berries and maple syrup… for those who need even more sugar. lol.

KINGSMILL CHRISTMAS MENU SERIES
Welcome to my Kingsmill Christmas Eve Dinner Menu series inspired by the fictional Christmas Eve celebration in my new story, Mistletoe for Holly (from the free Holly and Heartstrings Anthology). This blog series brings the charm of small-town Kingsmill to your holiday table.
This love story unfolds in the heart of the Virginia mountains, and includes a Christmas Eve dinner held in Schuyler Manor along the Shenandoah River. For the next few weeks, Iโll be sharing seasonal recipes from that celebration and today’s recipe is Eggnog Cinnamon Casserole.

Eggnog Cinnamon Casserole
I love this casserole because it can be made the night before and baked in the morning. Just make sure to take it out at least an hour before baking so it comes to room temperature before baking.
Ingredients
- 2 17.5 ounce cans refrigerated cinnamon rolls with icing
- 5 large eggs
- 3/4 cup + 3 Tablespoons fresh eggnog
- fresh assorted berries and maple syrup for serving, if desired
Instructions

Preheat the oven to 350โ and butter a 13" x 9" glass pan.

Open the cans of cinnamon rolls and cut each individual roll into six pieces. Scatter these pieces in the glass pan. Set the icing aside.

In a large bowl, whisk together the eggs and 3/4 cup of eggnog. Pour this mixture over the cinnamon rolls and bake for 30-40 minutes. Bake until the eggs are fully cooked and lightly browned on top.

In a small bowl, whisk together the icing and remaining 3 Tablespoons eggnog. Remove the casserole from the oven and drizzle the eggnog frosting over top. Serve immediately with fresh berries and maple syrup (if desired).
