There’s been a lot going on here in Virginia the past few weeks, including the passing of someone I cared deeply about. Since I also still have to work and plan a funeral and get ready for weeks of upcoming travel, I’m keeping my meals easy and trying to use fresh ingredients that are unique to Spring. I’ve been in desperate need of a mood pick-me-up this week in anticipation of a funeral, so today I’m making these Chocolate Strawberry Brownies. They’re easy to make and are a perfect afternoon snack. I hope you all have wonderful weekend!

Chocolate Strawberry Brownies
Ingredients
Brownies
- 2 large eggs
- 1/4 cup avocado oil
- 4 Tablespoons butter melted
- 2 Tablespoons water
- 1 teaspoon pure vanilla extract
- 1 1/4 cups sugar
- 3/4 cup flour
- 2/3 cup cocoa powder
- 1/2 cup confectioners’ sugar
- 1/2 teaspoon Kosher salt
- 1/2 cup semi-sweet chocolate chips
Garnish
- 3 cups strawberries washed with stems removed
- 1/2 cup semi-sweet chocolate chips
- 1 Tablespoon butter
Instructions

Preheat the oven to 325℉. Line an 8" square baking pan with parchment paper and lightly grease with butter or cooking spray.

In a large bowl, whisk together the eggs, oil, melted butter, water, and pure vanilla extract. Set aside.

In another large bowl sift together the flour, sugar, cocoa powder, confectioners' sugar, and salt. Stir the dry ingredients into the wet ingredients.

Fold the 1/2 cup chocolate chips into the batter. Pour the batter into the baking pan and bake for 35-40 minutes, making sure not to over-bake but that an inserted toothpick comes out clean. Remove from oven and allow to cool completely.

While brownies are cooling, wash, hull, and cut the strawberries into quarters. In a double boiler over medium heat, stir together the butter and 1/2 cup chocolate chips until melted. Once the brownies are cool, top with the strawberries and drizzle the melted chocolate over the top. Serve immediately!
