The Hungry {Romance} Writer: Watermelon Salad

It’s time for watermelons! I love watermelons, but I’m very picky about eating them because if they’re not sweet, or too slimy/grainy/hard, I’ll toss them. But when I find the perfect melon, one of my go-to recipes is this Watermelon salad. Watermelon, fresh cucumbers, and fresh strawberries make for a perfect summer side dish. It’s also a salad that helps me deal with the heat and stops me from wishing away these hot summer days. (although I’m always waiting for pumpkin spice season!)

Both love stories unfold in the heart of the Virginia mountains, and each features a rehearsal dinner held near the town’s historic 18th-century mill, along the Shenandoah River. For the next few weeks, I’ll be sharing the seasonal recipes from that riverside celebration and today’s recipe uses watermelons, my second-favorite summer fruit for Watermelon Salad.


Watermelon Salad

Ingredients

Honey Dressing

  • 2 Tablespoons honey
  • 2 Tablespoons lime juice
  • 1 Tablespoon extra virgin olive oil
  • pinch sea salt

Watermelon Salad

  • 1/2 watermelon peeled cut into cubes
  • 1 cucumber halved lengthwise and sliced
  • 1 cup strawberries hulled, washed, and sliced
  • 15 fresh mint leaves chopped
  • 15 fresh basil leaves chopped
  • 1/2 cup crumbled feta cheese more to your liking
  • balsamic vinegar for garnish

Instructions

Honey Dressing

  1. In a glass bowl, stir together the honey, lime juice, olive oil and salt. Set aside.

Watermelon Salad

  1. In a large glass bowl, stir together the watermelon, cucumber, strawberries, and fresh basil and fresh mint leaves. Stir in the dressing and toss very gently. Sprinkle feta cheese on top. Chill for 2 hours before serving.

  2. Before you serve, drizzle balsamic vinegar on top (optional).
